Fennel salad, wild fennel, marinated salmon and orange segments with strong Provolone Valpadana P.D.O.
for 2 people – difficulty: low – preparation time: 15 minutes
180 g Marinated salmon
extra virgin olive oil, salt, pepper
100 g Provolone Valpadana PDO strong
Cut the fennel into julienne strips and season it with oil, salt and pepper.
Cut the salmon into fairly thick slices and dice the orange segments and the strong Provolone Valpadana PDO. Serve with the fennel on the bottom of the plate and then alternate the orange and salmon. Add the strong Provolone Valpadana PDO and the wild fennel. Finish with the orange zest that you will have kept aside at the beginning, fresh and quick!
Chef’s tip: You can marinate the fresh salmon yourself, just cover it with an equal dose of salt and sugar for 6/8 hours in the refrigerator. Once rinsed, it will be even better than what you buy at the supermarket!
