Fried anchovies, spicy sauce and strong Provolone Valpadana P.D.O.

for 2 people – difficulty: average – preparation time: 30 minutes


10 clean and boneless anchovies
Frying oil
30 g Capers
30 g Fresh hot peppers
Extra virgin olive oil
50 g Strong Provolone Valpadana PDO


In a mixer, mince the peppers without their seeds, the capers and the parsley. Once mixed, add extra virgin olive oil and create a homogeneous sauce.
Pass the open anchovies in the grated bread and fry in abundant seed oil until golden brown. Salt it at the end.
Serve the anchovies on a serving tray, finish with the spicy sauce and the thickly grated strong Provolone Valpadana PDO!


Chef’s tip: Season the fish with lemon zest if you like!
