Fried egg with sautéed turnip tops and strong Provolone Valpadana P.D.O.

for 2 people – difficulty: low – preparation time: 10 minutes


2 Eggs
150 g Turnip tops
Garlic, extra virgin olive oil, salt and pepper
70 g Provolone Valpadana PDO strong


Heat some extra virgin olive oil in a pan with some garlic. Stew the turnip tops for a few minutes, salt slightly and when almost cooked add the eggs. Cook the egg white well, keeping the yolk runny.
Add plenty of grated strong Provolone Valpadana PDO with the heat off.
Serve directly in the pan and finish with browned bread in a pan with a drizzle of oil, the famous toasted bread!

Chef’s tip: you can put the egg whites in the pan first and add the egg yolks for the last few minutes!
